Cover the image with tissue paper. Roll it around a form. Wrap again in tissue and tape together using low stick painter's masking tape.
Then put in shipping tube. Wrap in bubble wrap.
Then put in larger shipping tube.
At least that's how I do it, but I'm all ears for a better way.

These are hardy and resuable
I would suggest getting a slightly oversized polypro or clear bag to put them in with a piece of mat board to support the print. Seal the bag with tape, and tape that in a sandwich to oversized fiber board (the board used for making peg boards). It is very secure and would take a lot to bend.

Put your money into packaging, because carriers will take your insurance money, but they won't pay on artwork. Fedx may go as high as $100, but that is it.
If the prints are big, the easiest way is in a tube; otherwise you're dealing with a huge flat package, which is expensive and unwieldy to ship. So follow Walter's directions above: cover the print with tissue; roll the print around a 3" tube that's a couple of inches longer than your print on both ends; wrap the result in paper; wrap that result in bubble; then take the bubble-wrapped tube to a shipping place and have them put it in a long thin cardboard box. Write on the box "unroll on a large table!!!" and make sure you're shipping it to someone who knows how to handle large prints, or you'll shortly be getting a phone call about the damaged print...
The ultimate shipping tube is 4 inch pvc pipe, with pvc caps on the ends.
