    What about a sector shutter? Basically a rotating disk with a cutout for the open position. I think a rotating design would be easier to build and control than a large sliding piece or flapping door. Apologies for the crude drawing but maybe something along those lines?

    The rotating shutters on the early Kodak (and other) box cameras would be easy to copy, and provide instant and time exposures. Varying the spring tension could give a modest range of instant exposures. Rotating shutters can be bulkier than a guillotine shutter. Adding one part to either type can provide bulb exposures.
