I have wondered that myself. The larger the negative the larger the problem with film flatness too. For those who scan with a flatbed and occasionally get an image drum scanned for a large print, they may be best off shooting 4x5. Of course if blowing up to 16X20 from an Epson consumer flatbed scan, 8x10 will look better. Contact printing and wet printing bring new considerations to the question.

A dedicated medium format scanner and a Mamiya 7 may be the best choice for some.

I don't think it's a one answer fits all kind of question.
