I prefer the 210mm on 4x5 for head and shoulder portraits.
I have the same setup (epson V750) and I scan my B&W negs at 16 bit greyscale at 2400dpi and save as a TIFF. Each file is about 200mb.
I also think LR 3 is a great investment. The integration with Photoshop is a plus down the road. I can do most of my editing in LR and then take the file to PS if I need really detailed editing. ...
I have had great results with KEH over the years. I have purchased a number of MF and LF items. That said, I always work with Ken, and he is totally knowledgable and really great to work with.
