I'm hoping some car practice, that is, pre-1949 cars with visible wheels, will be possible next week on a local speed-run beach.

Sure, it's just that the speeds are marked as such. I'm working on a Zeiss Miroflex at the mo' marked with a top speed of /2000 ... but it's just that it's a very narrow slit. Naturally you'll see...

I have one from about 1925, speed settings on a dial rather than on the rim. Image quality on 4x5 is excellent.
That must be the same as the Wephota NP27 ISO400 that I've used. In Ilford DDX it's supposed to be the same time as for HP5+, but I only used it with Rodinal, and that was at 1+50 for 16 minutes. ...

The bellows need to be 100% tightproof irrespective of the colour. Indian ink (Rotring, from an arts supplier) is very good. Then a quality liquid leather polish to keep it flexible.
