Note that the ICE stuff only works for color films, as far as I know.
So if you are going to be scanning a lot of dusty black and white, ICE won't help you.
I would agree with Brian except for two points
1. Inkjet and other digital printing techniques are still new and unstable, especially in black and white. This means that it can be a lot of work...
I've had good luck (albeit with 35mm and medium format) just shooting tri-x long expsoures and developing more or less normally or a bit under in D76 1:1.
With B&W, if you really want that night...

I dunno about "details in bright highlights", but this shot was taken on Hp-5, very similar to tri-x, and processed probably to N- 1 at the most, in d76 1:, and prints easily. It's on 35mm.

The only thing that really scares me about getting into 4x5 is film loading and processing.

Zone system is just a relatively systematic way for you to figure out how to expose/develop negatives to obtain enough shadow detail and a good contrast range....
