Why do they want to make such outdated camera for which film is scarce and expensive? A light 4x5 would make much more sense.
Crosfield gives the best shadow detail IMO.
Not much movement with standard belleows. I have the synthetic bag bellows, with it movement is a lot easier, lens coverage becomes the limiting factor.
I have used Paterson tank to do B&W and E6 processing (one sheet) with great success, non emulsion side against the wall, no problem.

You are the man! That does have a 'defogging' effect and makes color pop. Too bad photoshop doesn't allow 16bit in layer manipulation.
