Like the title says, does anyone know if the sliding carriage back off a Deardorff Studio 8x10 camera will fit the Century 8x10 stidio cameras?

I doubt it!
The totally bare Century back has a long ridge at the bottom for a channel at the bottom of the sliding back and a large central metal catch on the top.
The sliding back is designed to match the 8 pins at the corners of the standard type back with GG and springs - whether these are 5x7 or 8x10.
A Deardorff Studio might have the same system but someone who knows for real must confirm.

I modified one to fit. I started with a Deardorff Studio S11 Sliding back. I had plenty of wood to cut down and fit. What are the dimensions of the camera outer rear frame and your Studio Deardorff? There are 2 S8 cameras. An old style that there are still a few in use and the post 1944 (I think its 1944) that is bigger than a Century if I remember. It should not be a big deal to add a frame around it to "bush it out".
