I have just taken a Copal 0 shutter from a Grandagon 90mm f5.6 lens and put it onto a Schniender 120mm f8 - does this mean that i will have a mismatch with my shutter settings?

Shutter speeds will be as good as before, aperture scale may be off.

Your lens will be off a full stop on the aperture scale. So when the scale indicates f5.6 you're really at f8 for the 120.
A full stop is probably close enough but since aperture is based on the size of the actual aperture hole and the size of the light-gathering element of the lens, it might not be exactly one stop at all aperture settings.

Use a jeweler's screwdriver to remove the tiny screws attaching the aperture scales, and then swap the scales.
