Hello Drew,
I hope that you won't mind my making a suggestion. It is not that your exposure is under exposed as Armin suggested (the highlights are properly exposed) but rather that you need to create a large light source when you photograph highly reflective surfaces...in other words you do not light the horn but rather let the horn see the large light source. Create a large bank by shooting your strobes through a large expanse of white rip stop nylon (something on the order of 3 ft by 6 feet in this case). You can fabricate a frame for this bank by fabricating it from 3/4 inch PVC pipe. That is if you don't wish to buy a manufactured bank.

Its a 1921 Gibson F4 mandolin of which I am the present custodian. Played it last week on a local radio show, so its enjoying its old age. Most of these end up in collector's closets... not unlike photo equipment!

Not always heated - I remember visiting a cathedral in rural Poland in January; I had to tap through the ring of ice to touch the holy water.
