I am producing some marbled end sheets for a limited edition, hand printed, spiral bound letter size books. If I make the end sheets bordeless, will it foul the printer and ruin the backs of my other prints?

I seldom or never print borderless. I do lots of printing on both sides of rag paper with image and text. I use wide or narrow borders on my prints...I need my printer clean.

Would it be worth it to you to have them printed at an outside lab?

I would get close and cut.

Is the page spread/sheet as large at the max media size of your printer?

If not, bleed the image .125" past the border and trim down.

If so, do as [ C. D. Keth ] suggests.

That might mean that the book may have to be trimmed down 1/8" on top/fore-edge/bottom...

Print the covers on 11" x 14" and trim to size.

You want the covers slightly larger than the contents anyway.
